Dramatic coastlines, bright and bold colours and, of course, deliciously authentic cuisine.
Rich in history and culture, the food of Campania is just as renowned, highlighting its undeniable quality and influence. The immediate dish that comes to mind is the beloved Neapolitan pizza - we think you might know it quite well...but the region is famed for much more than just the masterful pie.
The classic Caprese Salad, hailing from Capri, truly captures some of Campania's classic flavours with the production of mozzarella di bufala and tomatoes revered. Often referring to their diet as the ‘food of the people’, allow us to further indulge in the 'food of Sugo'.
The Italian proverb says “See Naples and die” but I say, see Naples and live; for there seems a great deal worth living for.

Number 1 on our menu and in many of your hearts, our Tagliarini with olive oil, garlic, chilli & pangrattato takes great inspiration from Campania. The sumptuous but delicate olive oil creates a flavourful base to build on for this impactfully simple dish. Used in just about every recipe imaginable in the region - including a potentially polarising gelato - garlic lends its distinctive wonderful flavour to the dish, perfectly complimented by the fiery sharpness of chilli. Finished with a topping of pangrattato to add more texture and bite, this pasta oozes Campania class with every forkful.

Although a newbie to the Sugo menu, this dish needs no introduction...but we'll give it one anyway. Authentic Italian pork sausage infused with the gentle anise-flavourings and subtle pepperiness of the fennel and cooked in a heart warming and rich ragu. Served here with a classic penne (you don't need The Pasta Bible for that one). Penne with fennel sausage ragu: that's it. That's the tweet introduction.

Be whisked away to the scenic Campania coastlines with this new Sugo staple, Calamarata with baby squid ragu. Hailing from the southern region of Campania in Naples, calamarata was entitled due to the pasta's striking resemblance to calamari rings. Popularly paired with seafood, we've kept it on brand, opting for the delicate luxury of baby squid combined with the classic warmth of an Italian ragu. 10 on the menu, but also on taste levels...if we do say so ourselves.
